As part of her new video series, Gail’s Culinary Adventure, Top Chef judge Gail Simmons visits Palm Springs chef Michael Beckman’s Workshop Kitchen + Bar. Beckman has a gorgeous pizza oven, but he doesn't just use it to make pizza. In the accompanying video clip from Episode 1 of the series, Beckman uses the oven to finish his incredible chermoula-spiced, wood-fired sea bass and Gail gets to sample that fish, along with an enviable spread that includes the fabulous local Drake Farm goat cheese with braised lentils and glazed beets, and a beautiful citrus tart as a surprise birthday dessert—all while admiring the super-chic, rustic dining room, which was a movie theater in the 1920s.

The five-episode Gail’s Culinary Adventure series was shot while Gail was filming Top Chef Season 13, and in each one she takes us along as she makes side-trips to meet up with the best chefs, bakers, mixologists and more —from San Francisco to Palm Springs and beyond—and lets us in on what she's eating and drinking. Episode 2 will be available Wednesday, January 27 at Bravotv.com
